Vegan Moussaka

For the delicious vegan Moussaka you need the following ingredients:
- Sweet potatoes
- Eggplants
- Tomatoes
- Olive oil
- Iodized sea salt
- Tofu
- Red onions
- Garlic
- Tomato paste
- Agave syrup
- Black pepper
- Red wine
- Unsweetened cashew cream
- Parsley
Preheat the oven to 250 °C. Peal the sweet potatoes and cut them into thin slices. Wash the eggplants and cut them into 1 cm thick slices. Repeat this step with the tomatoes. Mix the olive oil with the salt and pour it over the sweet potatoes, the eggplants and the tomatoes. Place them on a baking sheet lined with parchment paper and bake it on the highest level of your oven for 15 minutes until the vegetables become slightly golden. Meanwhile, crumble the tofu and chop the onions and the garlic. Heat the olive oil in a pan and roast the tofu for about 4 minutes. Add the onions and the garlic and keep on roasting the mix for another 3 minutes. Now, add the tomato paste and the agave syrup and cook everything for about 1 more minute. Season it to taste with salt and pepper and deglaze with red wine.
Now, mix the cashew cream with water and heat in a bowl. Cut the parsley and add it. Season to taste with salt and pepper.
Eventually, build little towers by alternating the eggplants, the tofu mix, the tomatoes and the sweet potatoes. Put the cashew-parsley mouse on top.
There you go - dinner is served!
